Couscous Salad Recipe With
Cashews and Oranges
Here is another great salad recipe. The couscous
in this recipe makes this a very filling lunch dish. The Cashews
and Oranges give it a bit of an exotic flair. This is a great
salad that will not make for boring lunch. Give it a try
and see if you don't enjoy it as much as I am.
This salad can easily be prepared ahead of time.
Scoop some into a portable container for lunch-to-go.
Ingredients
Here's what you need for the couscous salad
recipe
8 oz of apple juice
6 oz of couscous (dried)
½ red pepper, cored, deseeded and diced
4 tablespoons chopped fresh parsley
2 tablespoons chopped fresh mint
1 oz of raisins
2 oranges peeled, deseeded and cut into segments
1 oz of cashew nuts
Here's what you need for the couscous salad
dressing
Juice of 1 orange
Juice of 1 lemon
2 teaspoons olive or walnut oil
1 teaspoon honey
Directions
Pour the applejuice in a saucepan and bring to a
boil. Remove the pot from the stove burner and slowly stir in
the couscous. Continue stirring until it is well incorporated.
Cover the pot and let the couscous stand for 7 to 10 minutes
until most of the liquid is absorbed. Fluff the cooked couscous
with a fork. Fold in the herbs, raisins and peppers and orange
pieces.
For the dressing, place the ingredients in a saucepan and gently
heat until the honey is dissolved. Do not bring the mixture to a
boil. Drizzle dressing over the salad and garnish with cashew
nuts.
