Broccoli Pasta Salad
You can easily make this salad ahead of time and
take it to work with you for lunch.
8 Servings
(1/2 cup each)
Ingredients
- 3/4 cup of low-fat mayonnaise
- 1/4 cup of sliced green onions
- 2 tablespoons chopped parsley
- 2 teaspoons lemon juice
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1-1/2-cup shell macaroni, cooked and drained
- 1 cup cooked broccoli flowerets
- 1/2 cup cooked sliced carrots
Directions
In large bowl, mix mayonnaise, green onion,
parsley, lemon juice, sugar, salt, and pepper until smooth.
Add remaining ingredients and toss to coat well.
Cover and chill.
